The products are always fresh.
So we have only a small stock.
At higher order, it can take up to 1-4 weeks until the ham is cured, smoked and matured.

The ham and bacon need about 6 to 8 weeks until is ready for eat.

Starts with 7-10 days in the salt lake (nitrite, salt spices).

Then the meat get "burned" means take a rest for 3 days without the saltlake.

After burnig its have to dry vor 2-3 days in the air. (im do it in the ref)

After this the smoking prozess starts. its get 3 to 5 times in the smoke for at least 6 hours.

Betwen, and after the smoking the meat have to rest and drying in the ref.

In this process the meat loost 50% of his weight, and is conservatet.


Normaly ham is produzed in wintertime, cold and dry air.

Im do it with cooled smoking ofen, and ref for dry the meat.


Working with love, fresh spices from own garden, only the best ingredients.
